Orange Cranberry Cake
2¼ cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
2 cups dried cranberries
Grated rind of 2 oranges
1 cup buttermilk
¾ cup oil
1 cup orange juice
1 cup powdered sugar
Preheat oven to 350°F, and prepare a tube pan.
In a large bowl, sift together flour, sugar, baking soda, baking powder, and salt.
Stir in cranberries and grated orange rind.
Stir in eggs, oil, and buttermilk. Mix well.
Pour mixture in pan, and bake for 1 hour until cake tests done.
Remove pan from oven.
Mix together the orange juice and powdered sugar.*
Poke holes in the top of the cake with a fork, and pour the orange juice mixture over the cake until it is absorbed.
*Baker’s Tip: Put orange juice and powdered sugar in a jar or air tight container. Close and shake well to mix.
